Recipe Share!

The past couple of Sundays I’ve been making muffins so that I have breakfast during the week – otherwise I end up eating dry mini wheats (which isn’t bad I just really LOVE these muffins!).  I got this recipe from my husband (a client at work made them and sent them the recipe) and I TOTALLY recommend trying these.

Here’s my batch from today and I’ve added the recipe below in case you’re interested!









Vegan Banana Muffins (w/ Dark Chocolate & Walnuts)


4   Over-ripe Bananas (I keep a bunch in the freezer all the time).

1/2   Cup Maple Syrup (you can sub molasses… or a little of both as I do in my muffins).

1/2   Cup Veggie Oil (I use Olive Oil… I have used Grape Seed Oil also… or both).

1   Teaspoon Cinnamon

3/4 Teaspoon Sea Salt

1    Cup Spelt Flour

1 1/2  Cup Whole Wheat Flour

1   Teaspoon Baking Powder

1   Teaspoon Baking Soda

1   Cup Walnuts (I crush them)

1/2  Cup Dark Chocolate “bits” or chips (at least half a Cup!) Add more… to taste!  (meaning I add a lot more!)


Pre-heat Oven to 350 Degrees F.

Mash Bananas in a bowl then add the Oil, and Sweetener (set aside)

In another Bowl mix together the dry ingredients…

Combine together, mix thoroughly then spoon into a greased muffin tin

Bake for 20 – 25 mins. Test with toothpick…
